Santoña is the world capital of Cantabrian anchovies, with dozens of canning factories maintaining a centuries-old artisan process. The guided factory visit lets you see each stage up close: the arrival of fresh fish, hand selection, barrel salting, months-long curing, hand filleting and final packing in olive oil. A guide or audiovisual presentation explains the history and secrets of each stage. The visit ends with a tasting of anchovies and other factory products, accompanied by a drink.
