A local cook with decades of experience teaches from selecting bomba rice — round, firm, able to absorb twice the broth without breaking — to the precise socarrat, that crispy bottom layer distinguishing a good paella from a memorable one. You cook your own paella in a steel paellera over orange wood fire, the traditional fuel adding a subtle unmistakable aroma. The class covers rice history in the Albufera (cultivated since the 8th century), differences between Valencian paella (chicken, rabbit, garrofón beans, green beans, tomato, saffron), arroz a banda (fish broth) and fideuá. Each participant receives the full recipe with chef tips. The workshop ends with tasting your paella, garden salad and DO Utiel-Requena red wine. Small groups of maximum 12.
